weekly obesssion avocado toast

 Ever since I tried avocado toast in Boulder I've been obsessed. I know this is not a new obsession for most foodies, but I finally found a place that served it and it looked so amazing I sucked it up and spent the $8 for it, and I think that's on the cheaper side. Now I make my own avocado toast almost every other day. After lots of trial and error (kinda, you really can't fuck it up) I figured out what I feel is the perfect combo. 
My first ever avocado toast and let me tell you it was life changing!
 First, the bread is the most important part. Now there are a few thing I splurge on at whole foods and one of those things now is their bakery bread, seed-tacular is pretty clutch for avocado toast. Don't get it sliced because you want to be able to cut a thicker slice to hold the toppings, and I put a shit ton of topping so I need a nice thick slice! 

The second best ingredient is the avocado. Obviously a nice ripe one is best, but there are two ways you can go about applying the avo. You can make it in to almost guacamole OR just slice it which is my preferred method. This is because you can tuck cherry tomatoes and radishes in between the cracks.


I don't over toast the bread, just enough for it to get a little crunch and a little golden color, but sometimes it doesn't even look toasted.  As you can see I cut a pretty thick slice cause I like to layer on the toppings! This may not even be considered toast when I'm done it's more like an open face vegetarian sandwich, but oh well.

Cherry tomatoes add some nice color and sweetness!

 Radishes aren't a veggie I eat often, but now I'm obsessed. They give a great crunch and have a slightly spicy flavor. They are also damn good for you, so just put them on!
 Arugula is my favorite green, and the slightly bitter taste is amazing with the creamy avocado and sweet tomatoes. A little goes a long way with all these ingredients so one box of cherry tomatoes $3, a bag of radishes $2 and a bag of arugula $2 can make 6+ toasts!
Lastly, an over medium egg. Now most people put olive oil on their avocado toast, but I don't need those calories and if you make a perfect egg (the one above was a little over done) the yoke acts like the olive oil with out the extra 120+ calories. I mean that's a beer! Which also goes great with avocado toast!

Bread: $5
Totaling: about $2 a toast

You can make at least 6 toasts!
