WARNING this may induce a sugar hangover... its a real thing
I love making cakes that bring people to the brink of diabetes. This is my newest master piece and I'm lazy so I always use store bought mixes cause who has time to make something from scratch, not me! This three layer ice cream cake is perfect for any occasion except for a vegans birthday party, cause yeah....
Ingredients:
Betty Crocker fudge brownies
Betty Crocker triple fudge cake
cookies and cream ice cream (your choice, but you need to get a tub)
Oreo cookies
heavy wipping cream
semisweet chocolate chips
shredded coconut
walnuts
confectioner suger
vanilla extract
milk
5 eggs
vegetable oil
three round aluminum cake pans
saran wrap
The night before:
Line one of the cake pans with saran wrap and dump the tub of ice-cream and smooth it out to fit the pan. You may want to leave the ice cream out for a minute so it is soft enough to model. Once its smoothed out put it back in the freezer over night. Also, there was a little extra ice cream, so treat yourself to a few bites, to make sure it tastes right.
The Next Day:
It's the big day! First, make the brownies and and cake, using the other two pans. You will have extra cake mix, I used the extra mix it to make cake doughnuts to decorate the cake. You could also make some cupcakes if you have the pans for it! I added some walnuts to the brownies, if someone is allergic please don't add them cause you don't want someones blood on your hands!
Since both the brownies and cake heat at 350 degrees, you can cook them at the same time. WARNING the brownies take longer so set a timer for both, so you don't forget and burn the shit out of your cake!
When they are done, let both of them cool completely before taking them out of the pans. While they are cooling, I made my chocolate ganache and mini doughnut glaze. To make the ganache you use 9oz of chocolate chips and 1 cup of heavy whipping cream, if you want to make it thicker just keep adding chocolate chips. I put the cream in a sauce pan and added the chips on low and whisked until they were blended. Then let it cool so I will thicken up, give it at least 10-15 minutes before using it! You can also heat it up in the microwave.
For the glaze, it was 2 cups of confectioners sugar, 3 tablespoons of water or milk and 1/2 teaspoon of vanilla extract. Then just mix them together and boom you have a glaze!
Now it's time to construct your masterpiece. The brownies are the bottom layer, since they are the heaviest. I then put another layer of walnuts on top and poured some chocolate ganache to help the ice cream layer and brownie layer stick, or at least that's how I rationalized it!
The middle layer is the ice cream. I wish I had smoothed the ice cream layer before adding the cake layer and ganache, so do that! It will also make the layers more seamless. On top of the ice cream I crushed Oreos and topped it with the final layer, chocolate cake.
I pour the ganache over the cake and let it cool! Again topping the cake with crushed Oreos.
Now to make it look MORE over the top and make the sides look less sloppy, I surounded the perimeter with the mini cake doughnuts. You could also use the extra Oreos as well, cause why not?!
The final product!! How to cut this cake, I don't honestly know. One may need a machete or chainsaw.... you have been notified.
