Be the hit of the BBQ this summer! banana pudding cake

Here I give you another box cake transformation! This is the easiest and based on my neighbors reaction, my best box cake creation yet! This light and fluffy banana pudding cake will be perfect for your next BBQ! And who doesn't like to be the talk of the party? My slightly self center ass doesn't mind one bit!

Neccesities
Cake:
2 - 8inch round pans
Yellow box cake ( soften butter, eggs, water)
1 packet of banana pudding
2 cups of milk
Box of Nilla Wafers
banana

Cool whip frosting:
Tub of cool whip
1 packet of vanilla pudding
1 tsp vanilla extract
1 cup of milk

First, make the yellow box cake. Heads up, yellow cake requires softened butter not oil, so just be prepared. Soften butter is like my kryptonite, but I read that it takes about 30 minutes to soften so put it out before running to the grocery store and you should be golden! Now you could make this as a sheet cake, but I personally think layered rounds just looks so much better! Again even after evenly dividing the cake mix it only took 25 minutes in my oven, so just know your oven!

When your cakes are done, let them cool for a minute and make your banana pudding. Mixing the banana pudding packet and 2 cups of milk till smooth. Take the cakes out of the pans. I put them on some aluminum foil so I could cover them with the pudding, but still stack them easily without ruining the pudding or breaking the cake trying to take them out of the pan. Before you cover the cake with pudding, take a straw or many suggest an end of a wooden spoon and poke a bunch of holes in the cake. I didn't poke them too deep, but you do you! I used abut 3/4 of the pudding to cover both cakes, I used the last little bit as glue for the assembly process. Once the cake is covered it's time to chill and let the pudding set! I let mine cool for about 2 hours, but I just had the time.  I'd give it at least an hour, but you could always check if your in a pinch for time.
Bottom layer. If you want you could also make more pudding, but I thought 1 packet was the perfect amount!

Right before your ready to assemble its time to make the super easy and delicious cool whip frosting. Heads up the cool whip is found in the freezer section, but needs to just be refrigerated to properly thaw. This also takes a few hours in the refrigerator, based on the tub thawing directions. I've attached the link to the recipe page I got this from above, but here's my break down. Vanilla pudding packet, 1 tsp vanilla extract, 1 cup of milk, MIX till smooth, fold in cool whip, DONE!

Assemble time! On the first layer I used whole Nilla Wafer, but you could also crumble them up and that would work too! Then I put a little pudding ( the pudding I told you to save!) on the wafers as glue. On top of the wafers I cut up a whole banana and layered it on top, again topping it with a little more banana pudding as glue. Now its time to stack the final layer! If you wanted to add more bananas to the top go for it, I thought the single layer of bananas in the center was perfect, but that's just me! Now for the frosting, just lather it on and your done!

I didn't cut the top of the cakes so there was a bit of a dome look, but the cake was still easy to cut and you can fill in the gaps with the frosting!


The final product! I kept it simple, but you could go crazy with more bananas and wafer crumbles! Or you could be a real fancy B and make a bananas foster type thing and drizzle it on top right before serving!

Trust me this is a crowd pleaser and a must if your going to or hosting a BBQ this summer and want to take it up a notch!
