chocolate coconut cheese cake cake
I honestly don't know what else to call this diabetes nightmare! This cake is perfect for that chocolate coconut lover in your life. My dad has always loved chocolate cakes with white frosting and coconut and I wanted to try to switch it up and take it to the next level. My favorite part of this cake is how the cheese cake cuts the sweetness of the frosting, it was a perfect combo! I plan on trying a strawberry version soon!
As always I used box cake, specifically the Triple Chocolate Cake mix by Betty Crocker. The coconut cheese cake was just a simple cheese cake recipe I found on Pintrest that I added the link below! For the frosting I was going to make home made coconut pecan frosting BUT pecans are so freaking EXPENSIVE for the amount I needed in my recipe I used store bought frosting instead and it was damn good!
Simple Directions:
Using two 8 inch pans, follow box cake directions and let sit to cool for at least an hour. After they are done cooling I trim the top so they are flat. I save the top as a treat for myself if my husband doesn't eat it first.
While the cakes are cooling make the cheese cake layer. I used a recipe from izzycooking.com that I found on Pintrest! Now if you do use this recipe obviously don't add the oreos, or do if you want to get crazy go for it! I added shredded coconut to the cheese cake, but next time I'd add coconut extract instead of vanilla extract! The recipe made enough for an 8 inch round pan. There was a little left over, but not much!
Now I didn't trim the cheese cake and I think next time I would have to make the layer a little thinner OR only fill the pan half way. Since it was a whole cheese cake I had to double the cooking time, just make sure the edges are golden brown! Let the cheese cake cool in the fridge for an hour or two before assembly.
ASSEMBLY time!
Starting a the bottom I added a layer of coconut pecan frosting and chocolate chips, I'd opt for the mini chips instead of the regular sized chips, but that's just me! Then I carefully placed the cake, with frosting, on top of the cheese cake then flipped them so the cake is on the bottom. Again adding a thin layer of frosting to the top of the cheese cake and repeat with the chocolate chips. My last layer is the final cake. Like all cakes, I did a thin frosting layer, cooled and the next day finished the final layer of frosting. I covered the edges in chocolate chips for extra flare and it was ready for consumption!
